Pollo a la Braza, in english means Grilled or Roast Chicken. Pollo a la braza is the most popular dish in Peru and is also popular among its neighbors, Columbia and Brazil. Originally its consumptions was specific to the wealthy people (during the 1950's till 1970's) but today it is widely available. The original version consisted of chicken (cooked in charcoal and marinated only with salt) served with large french fries and traditional eaten with the fingers, without the cutlery, although most modern Peruvians will eat it with a fork and knife. It is almost always served with creamy mayonnaise-based sauces, especially chili creamy sauce called Aji. In restaurants all over the United States like in Peru, Pollo a la braza is served with a portion of french fries, salad with homemade ranch sauce, and variety of sauce depending on the restaurants
